GERMANY – PORK & PRINCESS CASTLES

We “travel” back in time to our trip to Germany from our home during the stay-at-home orders due to coronavirus.  We flew to Munich, drive to Neuschwanstein Castle, and Berchtesgaden while making our way to Austria for a Viennese Ball.  We cook up a delicious Wiener Schnitzel (German Schnitzel) and potato salad.  We hope you enjoy. Why:               We have never taken the time to do something with our travel memories, photos, videos, so what better time to start than during our stay-at-home orders during the coronavirus pandemic.  Plus, we are craving travel, and this is our sweet escape for now.

Wiener Schnitzel Recipe

Ingredients
  

  • 2 Pork Chops
  • ½ Cup Flour
  • 1 Tbsp Garlic Salt
  • ½ Tbsp Paprika
  • ½-1 Cup Oil or Ghee
  • 2 Eggs
  • 1 Cup Bread Crumbs
  • ½ Lemon
  • 2 Tbsp Fresh Parsley (chopped)

Instructions
 

  • Put pork chop, one at a time, into zip-lock bag with a splash of oil or water.  Smash meat down, to about 1/4 inch thick, using a meat mallet or sledgehammer!?- whatever is on hand (of course Michael used a sledgehammer).  Cut lemon in half to make 2 wedges.
  • To fry the schnitzel add oil or ghee to large pan and bring to a high temp.  Test with a tiny wick of water, if sizzles oils ready.
  • Set up dredge:
    -Mix flour, garlic salt, paprika in a zip lock bag
    -whisk 2 eggs in a medium size bowl
    -add bread crumbs to a separate medium sized bowl
  • Add one pork to the flour mixture and coat evenly and shake of excess flour, set in egg coating quickly and shake off extra then toss in bread crumbs coating evenly.
  • Immediately set into oil and cook for about 2-3 minutes or until sides are golden brown then flip to cook other side 2-3 minutes.  Remove from oil and set on paper towel. 
  • Repeat process with other pork chop.
  • Serve with lemon wedge and sprinkled parsley on top.

Hot Potato Salad Recipe

Ingredients
  

  • 2 Russet Potatoes
  • ½ Onion
  • ½ Cup White Vinegar
  • ½ Tbsp Horseradish Mustard or Hot Mustard
  • 1 Tbsp Sugar
  • ¼ Tbsp Salt
  • 4 Bacon Slices
  • 2 Tbsp Fresh Parsley (chopped)
  • ½ Lemon

Instructions
 

  • In large pan cook bacon.  Remove bacon and save fat, setting bacon off to side on paper towel.  Once cooled chop into ½ inch size pieces.
  • Dice onion and add to bacon fat to cook for about 5-10 minutes or until fully cooked, brown and translucent.  Add vinegar, sugar, salt mustard to sautéed onions and cook for 2-3 minutes or until combined and slightly reduced.
  • Chop potatoes to about a 1 thick cubes and steam in steamer basket with enough water in a pot to reach the bottom of the steamer basket.
  • Drain potatoes and add to onion pan with bacon, juice of lemon, and parsley.  Turn off heat and toss to fully combine.
  • Serve with fresh parsley sprinkled on top.  Enjoy!
