Hot Potato Salad Recipe

- 2 Russet Potatoes
- ½ Onion
- ½ Cup White Vinegar
- ½ Tbsp Horseradish Mustard or Hot Mustard
- 1 Tbsp Sugar
- ¼ Tbsp Salt
- 4 Bacon Slices
- 2 Tbsp Fresh Parsley (chopped)
- ½ Lemon
In large pan cook bacon. Remove bacon and save fat, setting bacon off to side on paper towel. Once cooled chop into ½ inch size pieces.
Dice onion and add to bacon fat to cook for about 5-10 minutes or until fully cooked, brown and translucent. Add vinegar, sugar, salt mustard to sautéed onions and cook for 2-3 minutes or until combined and slightly reduced.
Chop potatoes to about a 1 thick cubes and steam in steamer basket with enough water in a pot to reach the bottom of the steamer basket.
Drain potatoes and add to onion pan with bacon, juice of lemon, and parsley. Turn off heat and toss to fully combine.
Serve with fresh parsley sprinkled on top. Enjoy!
