IRELAND – ROAD TRIP TO ONE OF THE MOST BEAUTIFUL PLACES (PART 2)

Hey guys!  Chloe & Michael here.  In this video, we reminisce about our last-minute epic trip to Ireland!  Michael has a first and we are uprooted and can’t get back to the US.  Below are more details about our trip & video.  We hope you enjoy.  Virtual hello and thank you to all!!

What:              St. Patrick’s Day Weekend celebration, flight canceled so ROAD TRIP!

When:             March 2016

Where:           Ireland

Why:               To celebrate of course!  Plus, we’ve never been and…beer.

Stay:                Oak Wood Arms Hotel (now called Traecey’s) – Shannon

Drinks:            N/A

What:              Reminiscent chat about our travel to Ireland over themed sips and food

When:             April 2020

Where:           At home (during coronavirus stay-at-home orders)

Why:               We have never taken the time to do something with our travel memories, photos, videos, so what better time to start than during our stay-at-home orders during the coronavirus pandemic.  Plus, we are craving travel, and this is our sweet escape for now.

Food:              Guinness Stew & Irish Mashed Potatoes

Ingredients
  

  • 3 Carrots
  • 2 Celery
  • 1 Onion
  • 10 Small Red Potatoes
  • 4 Beef Ribs
  • 1 Can of Guinness Beer
  • 4 Cups Beef Stock
  • 2 Tbsp Worchester Sauce
  • 1 Tbsp Apple Cider Vinegar
  • ½ Tube Tomato Paste
  • Thyme
  • Sage
  • Oregano

Instructions
 

  • In a large cooking pot heat ghee then add beef ribs to brown the outside 1-2 minutes each side.
  • Chop onion, celery, carrots, and potatoes.
  • Remove beef after browned, set in a bowl, and cover with foil.
  • Add chopped onion to a pot of fond and cook for 2 minutes then add celery for another minute. And carrots & potatoes as well as 1 Guinness & 4 cups of beef stock.
  • Re-Enter beef to pot and add salt, pepper, Thyme, Sage, & Oregano to taste.
  • Then to top off add 2 tablespoons of Worchester Sauce, 1 Tablespoon of Apple Cider Vinegar, & ½ tube of Tomato paste. Adjust to taste as needed.
  • Heat oven to 215°F (102°C) put the pot in the oven for 1 hour.
  • Check on the reduction of liquid…if needing more reduction continue to cook for up to another hour. If further thinking is needed add a flour roux (a ¼ cup at a time…half flour and half butter).
  • Once fully cooked and reduced top on potato recipe below and enjoy!

Irish Mashed Potatoes Recipe

Ingredients
  

  • 2 Russet Potatoes (or substitute 1 potato for equal parts cauliflower to lighten dish)
  • Butter
  • Milk
  • 2 Sliced Green Onions
  • Salt & Pepper to Taste

Instructions
 

  • Rinse and cube potatoes.
  • Heat a large pot of a cup to 2 cups of water to boil.
  • Put potatoes into a steamer basket and cook for 20 minutes.
  • Drain and return back to the pot.
  • Mash potatoes and add butter and milk.
  • After mostly mashed add green onion and mix. Season with salt and pepper to taste. Enjoy!
